Last night Michael and I went shopping for baby stuff. I’m going to a baby shower this weekend for a friend. I got some really cute jammies! By the time we got home, we were starving and wanted something quick.
I have been craving Mexican food lately. Who am I kidding? I always want Mexican food. I decided we’d make enchiladas. Supplies needed:
- Tortillas
- Shredded cheese
- Chopped onions
- Sliced black olives
- Black beans
- Red enchilada sauce
Inside the tortillas, we put the onion, cheese, olives and black beans. Roll them up and put them in the dish. Pour the enchilada sauce over the top, sprinkling cheese on top and bake for about 20 minutes in the oven. It’s really just until the cheese is melty.
We made 3 enchiladas and we both had 1 1/2. They are pretty filling.
I topped the enchiladas with two spoonfuls of light sour cream. Soooo good!! The only thing missing was some tortilla chips and guacamole. (I estimate dinner to be about 500 calories.)
For dessert, I made some chocolate pudding (160 calories) and topped it with a few chocolate chips (about 50 calories).
It was delicious!

They are so easy to make we have them pretty often. This was the first time we put black beans inside though! Tasty!
