There are many things you can do with leftover chicken. One of our favorites is to make quesadillas.
In this version, I spread some bean dip on the tortilla, added chopped onions and leftover rotisserie chicken, olives and cheese. You can add so many different things to jazz up the quesadillas: chopped peppers, chopped jalapenos, different kinds of cheeses, or black beans.
This is one of my favorite fast meals. It can be a lunch or a dinner.
Add a healthy salad as a side and you have a quick, easy dinner with leftovers.
Recently I made a Southwestern Chicken Salad and there were tons of leftover black beans, corn and green onions. I needed to use them up so I decided to add them to some scrambled eggs.
It was messy looking and not very photogenic but it was delicious!
Add some salsa and sour cream to the top of the eggs and it’s a great Southwest Scramble.
Some other ideas for leftovers:
1. Top pizza with shredded leftover chicken.
2. Use leftover rice for a casserole or add to soup to thicken it up.
3. Dice up leftover chicken and create a salad with light mayo, chopped celery and other veggies.
4. Use leftover chicken breasts in a casserole with cheese, rice and broccoli.

Yummy ideas! I don’t often have leftover chicken, but I love the ideas. Maybe I should start making extra so I will have leftovers?
