Dinner Friday night was easy but delicious. The leftover spaghetti squash needed to be used. It wasn’t quite cooked to our liking the other night but Michael thought microwaving it with some olive oil and water would cook it a little more. There weren’t enough leftover Turkey meatballs so we supplemented with some of the frozen Trader Joe’s meatballs.
Out of the three jars of spaghetti sauce from the pantry, I can now happily say there’s only one jar left! This time, I asked Michael to chop some onion and garlic and add it to the sauce. The jar sauces are usually pretty bland.
A little Adult Beverage to sip while we cooked….
Michael grilled up some zucchini to go with dinner. Add a little steak seasoning to the zucchini for a yummy salt flavor.
While he did that, I made the crescent rolls–oh yeah, from a can.
Everything was coming together nicely.
The second time around this dish was much better. I liked the sauce a lot and the garlic really made it better.

My hope was that the squash would soften up a bit with reheating but that didn’t happen. Oh well–dinner was still delicious.
The rolls were the perfect addition too. I ate two and resisted eating any more. The best part? There were no carbs and barely any calories in the “pasta” so I did not feel guilty at all for having 2 rolls and 2 brownies. 🙂
