Friday in Portland was surprisingly sunny out–which is always a good thing for me because it means the gym isn’t as crowded. After swimming, Michael and I went to our friend’s house for dinner. She was making chicken enchiladas (yum!). Who am I to pass up yummy homemade Mexican food? Plus, they have a new baby that is too adorable for words. I believe the words Michael used last night to describe me was “Baby Drunk.” What can I say? Babies are totally distracting to me. 🙂
Kat used chipotle peppers and green peppers and it was spicy!
She’s a really great cook and the enchiladas were delicious–and very spicy. I helped her assemble the enchiladas and my job was to sprinkle the Pepper Jack jalapeno cheese on top. A little Mexican beer to go with the Mexican dinner:
Michael made a wonderful salad with a Mexican twist. He used the Mexican cheese Cotija.
Chopped black olives, onion, avocado and a lime vinaigrette dressing.
He did a great job on the salad and it was delicious. It went perfectly with Kat’s enchiladas. She used the large flour tortillas so one enchilada was plenty of food.
Michael got some dessert from Trader Joe’s. Chocolate covered Bing Cherries. I was skeptical at first but they were so tasty. I will admit, I ate a few more than I should have. We offered to leave the chocolate cherries at Dave and Kat’s house for safe keeping when we left but they insisted we don’t!
It was great to see our friends and hang out. When we came home, I crawled into bed and do not even remember falling asleep. It was wonderful. I hadn’t realized how tired I was.
Saturday morning I woke up and had a lazy morning eating breakfast before heading to the gym.
A sourdough English muffin with peanut butter, banana and honey. The perfect pre-workout breakfast.

I LOVE the chocolate chip meringues from TJ’s, but ours always runs out. If they happen to be stripped from shelves, I’ll grab a box of their oatmeal cranberry dunkers – so perfect with a glass of Unsweetened Vanilla Almond Breeze!
