Wednesday
Wednesday night Michael and tackled the fridge…We decided chicken quesadillas were in order. I found a new recipe for guacamole and we gave that a try.
The recipe was for Tucson Guacamole. Basically a similar recipe that we use but instead of sour cream, the recipe calls for cream cheese. It sounded divine! But it wasn’t quite as great as our own creation. It was a bit on the thick side…too thick. I added some sour cream anyway to make it smoother.
The quesadillas on the other hand turned out fantastic!
Shredded Colby Jack cheese, leftover black beans, black olives, leftover chicken and topped with sour cream. They were really smokey and yummy.
Thursday
Thursday morning I had the rest of my root canal done. YUCK yuck yuck. I am sooo ready for this whole tooth business to be done with. I have to go back in two weeks from now to get a crown. I hope that will be the end of it.
Before my appointment I ate a Cinnamon Raisin Bagel and some pears (from the pantry!) for breakfast. The dentist experience was awful. But enough about the pain. When I got home I had soup.
I hope I’m not on the liquid diet for too much longer.
I do absolutely love Mrs. Grass Soup though. It’s the perfect “I’m sick and I feel grumpy and whiny and I don’t want to cook” kind of cure.
Thursday Dinner
If you aren’t from the Pacific NW, you probably have no idea what I mean when I say “Cougar Cheese.” Well Cougar Cheese is fancy cheese in a can with WSU logo on it. Cheese in a can? Yeah it sounds gross but it’s really not. It’s really good cheese. Michael got a can of white cheddar Cougar Cheese for Christmas last year from his mom. He used it in last night’s dinner.
Michael made a roux for the Mac n’ Cheese and used the shredded Cougar Cheese. It made the boxed Mac n’ Cheese 1000% better! It was amazing!
It was so creamy and the white cheddar had a bite to it that made the sauce perfect.
You definitely need to try making boxed mac n’ cheese this way! It’s so much better.
For dessert I had some pears and grapes.
It was soft enough for me to eat with my poor tooth hurting. To cheer myself up, I had some tea in my favorite Halloween mug!
I also reorganized the pantry to take proper stock of what we have. It’s looking much better and I’m really happy with the progress we are making (and the money we’re saving)!
QUESTION: How do you spruce up boxed mac n’ cheese?

Even though I come from a Husky family, Cougar cheese really does rock!
I could live on quesadillas! I don’t think I’d ever had one until college. Man did I miss out. Though my stepmom had this awesome recipe for Tortilla Stacks. I’ll have to find a healthy alternative (they were basically 5 tortillas with fillings between each one stacked and then baked in the oven).
I’m having taco sauce remorse b/c I bought a different brand than the Taco Bell, and it’s just not as good. Sigh. Maybe it’s healthier?

I like the Taco Bell sauce too. And I should have specified in my post that I am NOT a Cougar. 😉 Husky all the way!

I’m a Bronco (Santa Clara) but don’t keep in touch with one person from college so makes no difference to me. (I’d be prone to go with the college who makes the best cheese though they are having a Husky vs Cougar winemaking contest up here.)

Cougar Gold is amazing. I like how it crumbles, which lends it to many uses in cooking. We seem to have more Coug friends than Huskies. Cougar Gold is the one thing that makes Apple Cup parties at their houses tolerable!
