If you are just catching up on weekend reading, check out the awesome Chicken Enchiladas we made on Saturday. Or the super yummy ravioli dinner Michael surprised me with on Friday.
Yesterday I had a yummy snack of grapes, sliced cheese, stuffed olives and a few pita chips.
It was a good snack to tide me over until dinner.
Dinner was kind of a lazy affair last night. We had a bunch of leftover rotisserie chicken from the Chicken Enchiladas. We hadn’t intended to eat chicken three nights in a row, but that’s what happened!
Neither of us wanted to cook anything so I made big salads.
-Carrots
-Tomato
-Green Onion
-Yellow Peppers
-Craisins
-Chickpeas
-Leftover Chicken
-Some leftover bacon 🙂
I also added some cottage cheese for a little extra something.
It was a good, light dinner for two lazy and tired people! 😉
QUESTION: Do you ever feel too lazy to cook? What’s your favorite lazy meal?
Ashley over at Fashionably Fit commented on yesterday’s post:
“This is a great post and something I’ve been thinking about a lot lately. Does weight loss have to be at the center of your identity to succeed and maintain your healthy weight? Or at some point do you go on to be a “normal” person with a “normal” attitude about food? Weight loss and fitness are certainly not my only interests, but they do take up a lot of my time and thoughts.”
Thank you Ashley! It was a very insightful comment and it was nice to have someone articulate exactly what I had been feeling and thinking. I’m still trying to figure it out.
I know that I pushed myself really hard this year. Resting is a normal part of exercising. I’ve been re-evaluating my life, my hobbies and interests. Take out fitness from that list and I’ve got a list of sedentary activities:
-Reading
-Writing
-Watching movies
Hmmm…I’ll figure something out!
Maybe it’s time to really buckle down and try to write a book.
In case you were wondering: Yes, I am sore from Saturday’s weight lifting!! OUCH! 🙂 I hope I’m less sore tomorrow so I can head to the gym and do another workout!
QUESTION: How often do you lift weights?
Beth @ Beth's Journey to Thin
I do the Shred 1-2x a week for strength training but need to get better about using free weights!

I wish I was the type of person that could work out to videos!

Since starting marathon training I have been SO BAD about strength training! There was a time when I did it 5+ days a week!!! I am really looking forward to getting back into it once the marathon is over.
Lori (Finding Radiance)
I *love* lifting! I lift full body 3 times a week and really credit me being in a smaller size for my weight to strength training.
Like you, I am finding my way post weight loss and trying to redefine who I am. I don’t always necessarily want to be known as the woman who lost 100 pounds, and yet that is such a huge part of my life. Yet I hope to move on from that and maybe inspire in different ways.
Resting is hard. I had to stop myself from going to the gym this morning. I figure I need a good rest day after my ride yesterday LOL!
Lisa Eirene
You definitely earned a rest day after your bike ride!
When I was writing the post bemoaning my lost identity I actually thought of you. You are another blogger that has lost a significant amount of weight and I wondered how you dealt with those issues. But maybe as a wife and a mother you have an identity in that. I’m neither.
Lori (Finding Radiance)
Actually – I am not a mother, just a wife LOL!

I love to lift! Minimum of 3 days per week makes me happiest. I would bet that if you traded in runs (especially steady state cardio) for a month or so, you would have even more great transformations in your body.
I’ve seen so many people transform their bodies with 3 days a week of 20 minute cardio intervals combined with 3 days a week of RT that you would be astounded!
I say “Hit the Weights!!”
Lisa Eirene
I am excited to see some changes with the weight lifting!
Lisa (bakebikeblog)
oooh yum – I love that you added craisins to your salad!
@irun2befit
Great blog you have! I like all your progression pics, it’s so cool to see!! 🙂
Am I ever too lazy to cook? Most days! I make very simple things, sandwiches, wraps, salads..I’m really a lazy cook.
Lisa Eirene
Thanks for finding my blog! I agree…sandwiches are the best lazy food.
Ashley
Thanks for the shout out. 🙂
I am terrible at lifting weights because I just don’t like getting started. Once I do, I’m fine, and I love the delicious soreness afterward. I don’t know if you could take a class with your injury, but I just started (literally, have taken it three times) taking a class called 300 at my gym, based on the workouts that got the actors in shape for the movie “300.” It is INTENSE and a lot of weights. There’s also body pump/power pump/etc. Maybe it is all in my head but I swear I’ve seen results just from those three classes.
Lisa Eirene
Isn’t that the funniest? Hate doing weights but love the soreness afterwards!
