Friday night I was looking forward to my usual swim. All day I had been worried about my knee and I was skeptical that I could even swim. So when I got to the pool I was a bit apprehensive. I took it easy and let my body tell me what I could do.
I was able to swim my normal routine for the most part. I started with Freestyle and did that for half a mile. Normally I’d switch to Breast Stroke at that point. It hurt my knee. 🙁 I decided doing a limited swim routine was better than doing nothing, so I switched things up a bit. I grabbed my swimming buoy and swam Freestyle without using my legs.
Then I did normal Freestyle, then switched to Freestyle with the buoy and hand paddles.
After swimming my new routine (1.25 miles total) I sat in the hot tub for about 15 minutes. It felt WONDERFUL on my knee. My doctor had recommended I use the hot tub after swimming to help soothe it. It worked. I got to the car and my stomach was growling. I knew I wouldn’t make it home –I was so starving! I always have some snacks in the car “just in case” and I devoured a mini box of Cheerios.
When I got home I checked the mail on my way in and saw this:

When I walked into the house I saw that Michael had dinner almost ready for me. He also had some snacks and a glass of wine ready for me. The snacks were awesome: garlic and jalapenos stuffed green olives! YUM! I munched on the olives and sipped my wine while I waited for dinner.
Michael grilled up some rosemary chicken to go with the cheese ravioli.
It was a small piece of chicken and a serving of the ravioli.
I grated some fresh Parmesan cheese on top of the ravioli after Michael drizzled some olive oil on it.
We watched the latest Top Chef episode and a few episodes of Entourage. I elevated my legs and used my brace for support. I had about 500 calories left for the day and I really wanted some dessert.
I baked the last of the mini chocolate chip cookies for dessert.

QUESTION: How do you cook chicken so it doesn’t dry out?

I dont eat chicken but when I used to I often breaded it with panko crumbs and baked it. Sometimes it would get a little dry if I didn’t take it out in time and then I’d just have honey mustard or BBQ sauce to dip it in!

I poach it. You are assured beautifully moist and tender chicken. I like to poach it then take it out, put some pesto on top and then grill it for a few minutes.
