Dinner on Monday night was steak and gnocchi with pesto. Gnocchi and pesto is one of the best combinations we’ve discovered in a long time.
I made the heirloom tomato and mozzarella salad with the last tomato we had.
What goes best with steak? Red wine, of course.
And no we didn’t drink both bottles on Monday night! There was half a glass of the Pinot Noir left and I opened the Quenett for me. The steak wasn’t the best one we’ve had. I think it was because I bought a different kind of cut of meat than what I normally get. Ooops.
I had asked for Tuesday off from work months ago. Michael and I had discussed going out of town for Labor Day weekend. But the plans changed and I decided to keep my extra day off. I think I went back to work too soon after Hood to Coast. I spent all of last week in a foggy daze of exhaustion.

I slept in, I ate breakfast while I caught up on some emails, and then I went for a nice long swim at the pool. It was nice having the lane to myself and being able to just relax for awhile. Exercise is an important part of having a healthy life–and REST is also an important part. Rest happens to be something I don’t do very well. For example, Monday (yesterday) I took off as a Rest Day but then Michael and I went walking for over an hour and a half. Walking can be a workout too, so really did I have a Rest Day? I’m counting it as one but giving me a bad grade since I didn’t actually rest. π
For lunch I made Inca Red Quinoa and topped it with chickpeas and steamed carrots and broccoli.
Add some Goddess Dressing and a spoonful of cottage cheese and it was the perfect lunch.
When I went to the Milwaukie Farmer’s Market on Sunday, I picked up a Sweet Spanish Onion.
I have no idea what to do with it.

Dinner Tuesday night was another awesome salad.

-Chopped Red Delicious Apple
-Orange Peppers
-Cucumbers
-Craisins
-EVOO and Balsamic Vinegar
It was delicious! I also had a small cup of soup to go with my salad. It’s dark, pouring rain and cold out. Soup and salad was the perfect dinner.
Speaking of killer salads, one I had a few days ago is high on my list of “Awesome Salad Creations.”

I love black beans, corn, avocado, red onion, tomato, cilantro, and lime juice with a little salt and pepper. Lately i’ve been really into lettuce-less salads because in my head they feel more filling. π

That’s one fine-lookin onion! I use sweet vidalias in my Mexican dishes like enchiladas and picante chicken — which is really easy – I just cook some chicken, then saute onion and garlic, and throw that in with the chicken, then add chicken stock and salsa to THAT, and simmer a cup of uncooked rice in it until the rice is done. Last night I made a dish with quinoa and cilantro lime dressing – that would also be great with a little Spanish onion thrown in.
