The original plan for tonight was leftovers from last night (White Trash Casserole) because Michael planned on going to the golfing range. He decided not to go and so I said I’d cook dinner. The recipe I was GOING to make was Angel Hair Pasta with Goat Cheese and Tomatoes. I wasn’t really feeling pasta tonight (after all that research, too!) so when Michael said he’d pick up a roasted chicken from the store I said sure.
The deli rotisserie chicken is sometimes hard to pass up. It always smells so good at the store! It’s easy, healthy, and there’s also leftovers. I told Michael I wanted to to use the leftover chicken for enchiladas on Friday.
I washed both potatoes, poked holes in them, and rubbed them with Grapeseed Oil. I wrapped them individually in foil and popped them in the oven at 350 degrees.
While they are baking, I’m blogging, watching “Lie to Me” and also preparing the veggies to be steamed.
After about 40 minutes, I checked the potatoes and they were STILL rock hard. GRRRR. I finally Googled it and apparently it takes up to an hour and a half to bake potatoes! What the heck?! No wonder I always microwaved my potatoes when I was single!
Dinner turned out tasty, despite the time it took in the end! I ended up not eating all of the baked potato because it was just too much food. I’m full! I estimate the calories for dinner to be about 850 calories. That’s quite a bit for dinner (for me) but since I ran today I had a lot of extra calories (and hunger).

I love those rotisserie chickens, too. They’re so easy (and, yes, smell amazing). I always have a bunch of meat left over for meals later in the week, which makes life that much better. My mother uses that for her homemade chicken soup. And I’m with you: I always microwave my potatoes. I rarely have enough time to wait for them to bake all the way through.

I’m so glad I’m not the only one! Cooking has never been my forte (Baking is my thing) so I’d much rather choose “easy” and “fast” things. -Lisa 🙂

oh man mitch hedburg (comedian has a good joke about the baked potato situation you described). Part of it goes like this: It takes forever to cook a baked potato in a conventional oven. Sometimes, I’ll just throw one in there, even if I don’t want one. By the time it’s done, who knows?
