Hmm….that sounds naughty, doesn’t it? Well it’s not nearly as naughty as it implies…. π
Michael went to go play golf with a buddy Thursday night so I had the whole house to myself. I’d left work early for a dentist appointment and it didn’t take too long. I went swimming even though I usually prefer to go on Friday nights. The pool was insanely crowded and it wasn’t a very enjoyable workout. Oh well. On a side note, I’m so glad everyone liked my last post on Lap Swimming Etiquette!
When I lived on my own,Β I ate a lot of salads for dinner. A quickie salad loaded with lots of fresh veggies and some protein (grilled chicken or salmon) is an excellent dinner. And healthy! I ate a lot of salads on my own. On nights when Michael wants to go play with the boys, I usually default to the usual: salad. This particular salad is something I’ve written about on my blog before. First, I cook Quinoa. This time I used the Inca Red Quinoa. I had some leftover Chicken Broth from the Pork Chop recipe we did the other night. I used that instead of water to cook the quinoa.
I steamed some veggies while the quinoa cooked: fresh broccoli, baby carrots, and frozen peas.
After the quinoa was cooked, I poured some chickpeas on top.
Then I poured the steamed veggies on top of everything and added my favorite: Goddess Dressing. π
The dinner is pretty low in calories and all of it is healthy. It’s also filling. I felt stuffed!

I love making baked sweet potatoes and loading it up with beans, veggies, and cheese. This is never enough for my boyfriend to consider a meal since there’s no meat but it works perfectly for me!

I love eating greek yogurt with chia seeds and honey lately. It is very single-girl, because I don’t even take it out of the container most of the time.
I also love making breakfast foods at all different times of day.. eggs and toast, eggs and grits, normally with a bunch of wilted spinach.
