Don’t you love it when a dinner turns out really well? That happened last night with the halibut we grilled.
Our friend, Shoe, came over for dinner. Michael went to New Seasons (sort of like Whole Foods) to get an Ahi Tuna steak to grill. They didn’t have any so he improvised and picked up some fresh halibut.
I was a little wary about the halibut because it’s not my favorite fish. When I order it in restaurants it tends to be really dry.
We seasoned the halibut with salt, pepper and olive oil and grilled it for 12 minutes (about 6 minutes each side). The halibut was incredibly good! It wasn’t dried out at all. Michael thinks we should grill it for 14 minutes next time.
The rest of the menu was also delicious! We grilled corn on the cob a la Jeremy:
Michael also grilled up some crab cakes! These were the big hit.
I topped the halibut with fresh mango salsa.
Dinner was awesome! Especially the crab cakes.
I enjoyed dinner with a glass of Pinot Grigio.
The impromptu dinner turned out really delicious.

I should try some halibut – haven’t had it in forever. Sometimes I have a problem with fish texture, not taste, just texture, but I’m working on it. That’s why a firm fish, like salmon, works for me.

I agree, I prefer salmon. But the halibut was a surprise hit! There probably is a story behind “Shoe” but for the life of me, I can’t remember. He’s just “Shoe” now. 🙂
