Here’s a recipe for the Veggie Pasta Salad I made for the Hood to Coast Potluck:
Veggie Pasta Salad
Broccoli Florets
Yellow Pepper
Red Onion
Black Olives
Fresh Mozzarella Cheese
Tomatoes
Dressing
I sliced the yellow peppers and cut the broccoli into florets. The mozzarella cheese was cubed and I sliced the black olives.
You can choose whatever kind of tomatoes you want. I like the grape or cherry tomatoes, personally. I sliced the grape tomatoes in half.
Choose whatever pasta you want. I chose the Gemelli because it’s a fun shape and fairly small.
Mix it all together and add the dressing. I modify bottled dressing.
In a separate bowl, pour some of the bottled dressing into it and then add more olive oil to dilute it a bit. Add a spoonful of sugar, some salt and pepper to taste. Mix it all together. If it’s too sweet, add more of the dressing to dilute it. If it’s not sweet enough, slowly add more sugar and taste it. I also add in fresh Italian herbs to the dressing mixture. Pour over the pasta and veggies, mix well and cool in the fridge before serving.

I love making pasta salads with lots of veggies because then it can be so much healthier than the normal kind. Using dressing instead of mayo is such a great idea too so its lighter!
