Tonight’s dinner is fried chicken! I got organically fed chicken from Trader Joe’s and Michael is fryin’ em up!
First, he dipped the chicken pieces in flour, then egg (with a little Tabasco), then a bread crumb mixture with salt, pepper and cayenne pepper.
Dipping is really messy! But the outcome is worth it.
While this was happening, the baby red potatoes were boiling before grilling them in the skillet with the onions and garlic.
The temperature of the oil needed to be I think 169 degrees. Michael used his meat thermometer to make sure. Time to fry up the chicken!
I’ve always been more of a baker than anything. Working with hot oil on a skillet scares the bejesus out of me. Here’s a picture of the Frying chicken:
And the outcome was pretty good!
The potatoes were great. I steamed green beans with a touch of butter and some salt. Michael thinks the chicken was a little dry but I liked it!
