Life has been a bit of a whirlwind in the last week or two! I wrote a lot of posts about our weekend in Hood River. Lots of photos and lots of good food! Because of that, I’ve slacked off a bit on the food blogging aspect and wanted to share a few of the yummy meals we’ve made since we got home.
First was our weekly Steak Night. YUM! I picked up a sirloin steak and Michael grilled it up outside with Worcestershire sauce and steak seasoning. While he was doing that, I made the salad and the Trader Joe’s gnocchi with pesto. It’s such a delicious combo! But then, doesn’t pesto go deliciously with almost everything?
This steak cut I picked up was a tad on the fatty side but it was still delicious.
The next meal was last night’s fajitas. We had leftover steak (uncooked) from the steak night on Monday. It wasn’t enough to eat as “Steak” but too much for just one person to eat. Solution? Fajitas!
We walked to the store and picked up some things we needed. Michael worked on the fajitas part and I was the sous chef: chopping all the “fixings”.
I opened a “cheap” bottle of wine that was surprisingly really good!
Michael made guacamole with avocado, garlic and chopped jalapenos. I added chopped tomato to it and some sour cream. It was a great addition. Since we snacked on tortilla chips and guac while cooking, I only had one fajita for dinner.
Last week before we left for our vacation, I made some REALLY good quesadillas for lunch! We had leftover rotisserie chicken and I used that in the quesadillas with black beans, olives and cheese. It was delicious if I do say so myself!
I previously mentioned that I received some POM from POM Wonderful. I feel like it’s too high in calories and a tad sweet, so I ‘ve started to dilute it. I’ve had it with my breakfast this week in diluted form.

I agree with you about POM being fairly high in calories, and it is a bit strong for my tastes, so I dilute it too (I add water to most juices because they are too strong for me!). Have you tried their iced tea? It is 140Cal for the bottle, so 70 a serving and very refeshing.
