Dinner last night was a mixture of tasty convenience:

I went to a friend’s house after my doctor appointment last night to help her try on her wedding dress. She’s getting married in 2 short weeks and needed some assistance. The dress looks great! But by the time I got home, it was almost 8:15! Michael kindly made dinner. He picked up the chicken at the store and prepared the zucchini to fry.
I’m not sure if he used a recipe for the breading, but he did mention that he “winged it.” I thought it was pretty tasty but we both agreed it was missing something. I’m not sure what…maybe some melted mozzarella cheese? Or some kind of seasoning in the breading? Any ideas?
I made us salads. We used some red sauce to dip the fried zucchini in.
Somehow, I forgot to take a picture of the dinner, too. Weird.
I think tonight’s dinner will be something created with the leftover chicken from last night. Not sure yet what that will be.
Lunchtime Run
I hadn’t planned on running today but one look at the blue skies and NO rain changed my mind! I think the rain is returning tomorrow for the rest of the week. I took advantage of cloudless skies.
It was quite warm outside. I slathered on the sunscreen and wore a hat. My time was fast, I felt really good. At first I thought I’d have to time to try a new longer route but I realized I didn’t have enough time to do that today. It will have to wait until Friday (weather permitting). I did go the “long” way around the Waterfront, though.

Good run! That zucchini looks great. I think I am going to try and create a baked version. I just read your GI post below, and I am trying to eat lower GI foods too. If I don’t, I am constantly wanting to eat.
