What a great article! I’m such a huge Top Chef fan and I loved reading this great article about Richard Blais. The photo of him “before” was rather shocking. I know him as the skinny chef from Top Chef All Stars. What an inspiring read!

The first place that comes to my mind is Pok Pok–a trendy, awesome restaurant that always has a long line. Even on a Tuesday night. Why is this the new trend? Recently I read a good book too: Cooking Dirty. It’s a memoir of a writer/chef detailing his life in the kitchen. It starts with his first job as a dishwasher at a pizzeria and goes from there. The book is gritty and raw. It’s kind of a cross between Jack Kerouac and Anthony Bourdain.
“I wrote an essay about what it was like during those cooking classes I gave to look up and see fifty stick-thin, health-conscious suburban housewives squirming uncomfortably in their chairs and watching the mounting horror as I added pound after pound of high-fat European butter to my sauce, about all of them staring at me with equal parts lust and revulsion–as though I were up at the front of the room chopping up kittens for stew, but then dipping the kittens in yummy, yummy chocolate.”
The writing is crisp and concise with sarcastic stories, vulgar language and mysterious “kitchen” language thrown in. (I have no idea what their short-hand language means!) It’s a really good read and a way different view than reality TV shows of what cooking is really like! Read it!
