Monday was a much-needed Rest Day for me. My knee bugged me all weekend so instead of swimming after work, I went home. I started by marinading the steak for dinner:
A splash of teriyaki, soy sauce, Worcestershire, splash of red wine, sliced garlic, onion powder, garlic powder and fresh thyme.
I bought a nice cut of steak: Boneless Rib Eye Steak Lip-on (no idea what that meant). It had nice marbling and it was .57 of a pound. It was a good size for us to share.
I peeled and cut up one sweet potato to make fries for us to share as well. I also sliced one zucchini to sautee in a skillet.
I topped some of the zucchini with a tiny bit of herbed goat cheese. The components were all delicious but putting them all together they were WAY salty. I don’t know why because we didn’t really add any salt to any of it.
I photographed Michael’s plate instead of mine because the steak sort of got mangled a bit when we were diving it up. So imagine about half of that size of the steak as mine. 🙂

I’m cleaning out my closet! I have a running skirt that I bought last Spring but never wore (boo). I took the label off, washed it, and then forgot all about it in the back of my closet for a year. Now? It’s too big and instead of just tossing it, I want to give it away!

Love the skirt! I haven’t planned my next event, but I just ran the Trolley Run in KC on Sunday (the largest timed 4-mile race in the country). I ran all four miles with no walking which is the furthest I have run.
I know I will do the Race for the Cure in August, but I want to do something before that. My goal is half marathon in late 2012 (I want to travel somewhere for it so I need to plan a vacation around that).

I LOVE the idea of planning a race around a vacation. Before I got injured my boyfriend and I were going to go to Vegas on vacation and so I could run that Half. Oh well, maybe next year!

I bet it would. 12k! That’s nice. Before Hood to Coast the longest race I did was an 8k. I really liked that distance (but not the hills). 🙂
