I had plans of making dinner last night but when I walked in the door Michael was already hard at work making fajitas. It’s been ages since we’ve had fajitas. It was a favorite meal this summer.
This time Michael marinaded the steak in the sauce for about an hour while all the prep work happened.
Usually I’m Michael’s prep chef and cut the peppers and stuff but he was already on top of everything.
I snacked on some of the amazing guacamole while he cooked. 😉
Crushed avocado, freshly minced garlic, chopped jalapeno peppers, freshly ground pepper, Worcestershire sauce, and lime juice.
Here’s the twist….Instead of making traditional fajitas we skipped the tortillas and decided to make a Fajita salad instead. Michael’s salad was made out of baby spinach.
I used regular lettuce for my salad.
I topped my salad with some shredded cheese (Michael skipped the cheese). Our “dressing” was sour cream and lime juice mixed in with the salad.
Then I topped both salads with guacamole and black beans.
Plus black olives and the onions and peppers after they were cooked.
Then Michael chopped the fajitas into chunks and topped the salad with that.
Dinner was delicious and it wasn’t a gut bomb like regular fajitas are. I liked the new twist of making it into a salad instead. It saves on calories and carbs. The tortillas always fill me up.
Fat Kitty gave us some dinnertime entertainment.

We watched the current week’s episode of Top Chef Allstars. Anyone else watch it? I loved last week’s challenge where the contestants had to recreate the dishes that SENT THEM HOME. Brilliant!!!
** SPOILER TIME **
I am really surprised at how this season of Top Chef is taking shape. First, I love so many of the contestants. I never watched the first 3 or 4 seasons of the show so half of the contestants are new to me. However, I’m noticing that there are some impressive chefs in the group. I really like Richard Blais. He’s innovative and fascinating to watch.
I’m equally surprised at how ANGRY most of the contestants are. Remember fun-loving, sweet, funny Fabio? Suddenly he’s a combative, aggressive, angry guy. It’s very weird.
Here’s the spoiler part…I never really liked Jenn when she was on the show the first time around. I just didn’t like her personality. However, she seemed like a decent cook. This week she seemed to have taken steroids and went on a rage. She insulted the judges, was a total bitch to her fellow chefs, and basically through a hissy-fit because she thought she should have won. What happened instead? She went home.
It was a dramatic episode. What was your opinion?

I TOTALLY agree about Jenn. I wasn’t a huge fan of hers when she was on the Vegas season, but WOW! What the hell did she take before this episode to make her so angry? I actually read Gail Simmons’ blog over at http://www.ew.com where she thinks the reason this season the chefs are talking back so much is because they are already comfortable with the judges. There is no intimidation factor that usually goes into a new season. They are all more seasoned, more confident and therefore more defensive. I thought it was an interesting point.
But you know someone is crossing the line when even Tiffany (Season 1 runner up, with the long red hair) thinks you’re crossing the line. She was a big “talk backer” when she was on and always got defensive.

That’s a great point and I figured comfort was part of the reason for talking back. It’s weird how they are suddenly so confident in their abilities when they were SENT HOME in the first place!

Oh I know… The egos are out of control! I have to say Jamie is the worst though. (the one who cut her thumb, which by the way, lame!) She was on Richard Blais’ season and I hated her then and hate her now. Constantly feels she’s better than everyone, and yet she didn’t even make the finals her season. Ugh…

I think Jaime was the season with Fabio…5? I think? I liked her! At least I used to. This season I don’t like her as much, which is a bummer.
